Opera singer Claire Lyon’s career has taken her all over the globe – starring in The Phantom of the Opera and touring with Josh Groban – but it’s this sublime stretch of Australian coast that she misses the most while she’s gone. “My fiancé has holidayed here his whole life,” she explains. “He brought me to his family beach house in Merimbula on one of our first dates and a year later, proposed to me whilst paddle boarding down the Pambula River, so it’s a very special place for us.” Their favourite spots include clear and calm bodies of water, a must-visit dog beach and some chic little restaurants, spanning Merimbula, Pambula and Bermagui. How to get there
The Sapphire Coast stretches from Bermagui in the north to Eden in the south. Depending on where you stay, it’s about a six-hour drive from either Sydney or Melbourne. 

Insider tip
From May to November, Eden is one of the best places to spot whales on their annual migration. It’s been dubbed the Humpback Highway!
